Besides all of the pearls of wisdom I blog about, I’d now like to share a favorite recipe. It’s sort of Real Estate oriented since the vegetables are home grown. One of the great advantages of home ownership!
I make these zucchini boats often. They’re easy and delicious.
Ingredients:
1 large zucchini cut longways
1 small onion chopped
1 ½ lbs lean ground beef
2 eggs
1 cup bread crumbs (seasoned are good)
1 small jar of spaghetti sauce.
Shredded mozzarella cheese and grated Parmesan cheese
Minced garlic (or garlic salt), dried basil
A little olive oil
Chopped up zucchini innards, about a cup
Directions:
- Preheat the oven to 350
- Scoop out the zucchini. You can use a teaspoon and dig it out in layers. You’ll keep some of it chopped up and add it to the ingredients.
- Heat oil in a shallow pan and cook onion until translucent. Add garlic and zucchini innards and cook a little longer.
- In a bowl, mix the beef, eggs, bread crumbs, basil and Parmesan cheese. Then add onion mixture. Stuff zucchini halves with the mix and put them in a baking pan. Spoon sauce over them until covered.
- Bake until meat is cooked, about 45 minutes. Sprinkle with mozzarella cheese and return to oven until cheese melts.
Variation:
I do the same basic recipe but I use dry chili mix and red beans and pre-cook the it with the beef and other stuffing ingredients. Bake for less time. Still use the cheese and sauce toppings.
